“Real” Chicken Salad

  • 2 packages of chicken tenderloins
  • 1 large celery stalk, finely chopped
  • 1 teaspoon dry minced onion
  • Salt
  • Pepper
  • 1-2 tbs fresh dill, finely chopped
  • 1 1/4 cups mayonnaise
  • 1 1/4 cups sour cream
  • 1 tbs milk

To begin, simply boil chicken tenderloins in a pot of boiling water until they start to break apart with a spoon and throughly cooked through.

I would say I boiled mine for at least 45 minutes to make sure they were totally finished.

Drain the hot water out of the pot. Run cold water over the chicken and drain again. Place chicken in refrigerator until totally cooled.

Then, cut each tenderloin in half lengthwise and chop into a small dice. Place in large mixing bowl.

To the bowl of chicken, add your finely chopped celery.

Now, season it up!

Add salt, pepper, minced onion and chopped dill.

Start with 1 tablespoon of chopped dill and after you taste it later, you can decide if you’d like to add more.

Me? I added more. 😃

Add sour cream (I used fat free) and mayonnaise ( I used the kind with olive oil).

Pour in that tablespoon of milk…

Give it a good ol’ stir. Some of he chicken will start to shred but that’s what we want!

Give it a taste. Does it need more salt or pepper? Think it needs more dressing? A little more milk for creaminess? More dill?

Add it! Just do it!

Instructions
  1. Boil chicken tenderloins in water until you can break them apart with a spoon (about 40-45 minutes) until thoroughly cooked through.
  2. Completely cool chicken by running cold water on top, draining and placing in refrigerator.
  3. Once chicken is cooled, cut each piece lengthwise and chop into a small dice.
  4. Add diced chicken to a large bowl.
  5. Add chopped celery.
  6. Season with dry minced onion, salt, pepper and dill. Add more of each seasoning as you see fit.
  7. Add sour cream and mayo to chicken mixture.
  8. Add splash of milk and stir.
  9. Chill in refrigerator for an hour to combine flavors.
