Sausage and Vegetable Pasta


At work today, my co-worker brought in some pasta she made for a friend/co-worker. She told me to take a bite and  – oh my goodness! T’was it delicious!!! A nice, garlicky, Italian, flavorful pasta topped with Italian cheese! Wow!


  • Five pieces of turkey sausage links
  • 2 tablespoons of olive oil
  • 3 tablespoons minced garlic
  • 2 zucchini
  • 1 1/2 cups frozen spinach
  • 1 lb of your favorite pasta – I chose penne
  • salt
  • pepper
  • garlic powder
  • Parmesan & Romano


Drizzle your pan with olive oil.

Cut the top your sausage links and squeeze the sausage out of the casings into your pan.

Add your garlic and cook until browned.

While the meat is browning, boil your water and cook your pasta.

Now that you’ve got a good start on this dish, use a box grater to grate up your zucchini. Great idea –  thanks Connie!

Add the grated zucchini to your sausage along with your spinach, salt, pepper and garlic powder.

This will not take long to cook.

Keep stirring everything together until vegetables are tender.

Before pouring your pasta through the strainer, take about 4 ladles full of the starchy water that your pasta has cooked in, and add it to your sausage and veggie mixture.

Strain all of the pasta and remaining water and dump penne into a large bowl.

Add your sausage and veggies, stir, and you’re done!!

Top with Parmesan-Romano cheese before serving!
