So, since I am Italian, I could never and will never, eat sauce out at restaurants.
That being said, when I would go to Olive Garden with one of my best friends (of 30 years), we would order the Chicken Alfredo Pizza.
Wow was it good – and rich!! I don’t believe it is on the menu any longer but this is my creation of a favorite of mine from when I was in my early twenties!
- 1 pizza shell
- 1 8oz package of cream cheese – softened
- 1/2 stick of butter
- minced garlic
- 1 cup milk (I used almond)
- 1 cup parmesan (or a little more…)
- canola oil
- olive oil spray
- 3 chicken breasts – thin
- 3 cups mozzarella cheese – shredded
*preheat oven to 425 degrees
To start this cheesy goodness off right, you will first need to make the Alfredo sauce!
Start by heating your pan and melting down your butter and cream cheese.
Once the butter and cream cheese start to melt, break it all apart with a spoon and add your milk.
Then, “trow in” your minced garlic – my grandpa used to say “throw” like that! 🙂
Looks like I added about a teaspoon..
Next, add your salt, pepper and parmesan and stir until combined.
Let this simmer on low for about 8-10 minutes until it thickens. Stir it around every couple of minutes to make sure everything is melting nicely.
If you think it needs to be thicker, add a little more parmesan. If it’s too thick add a little more milk.
On to the chicken!
Place your thinly sliced chicken breasts in a hot skillet drizzled with canola oil.
Top each piece with salt, garlic powder and a little more pepper than normal – a little extra flavor in each bite!
Fry for about 3-5 minutes per side.
Your chicken should be just about cooked through!
Now, remove each piece from the skillet and transfer to a cutting board.
Cut each chicken breast into small pieces and place back into skillet to make sure it’s all thoroughly cooked.
Time to assemble!!
First, spray the back of your pizza crust with olive oil spray (or spread canola or olive oil on the back of the pizza dough with your hand) and place on your pizza pan.
Slowly pour this cheesy, thick, flavorful alfredo sauce onto the center of your pizza dough….
In a circular motion, spread the goodness all over the place – shouldn’t we all be doing that anyway??! 🙂
Top your alfredo sauce with the chicken…
Then the mozzarella!
Finish it up with a little basil on top (not pictured – I forgot – boo!!!!!)
Bake your Chicken Alfredo pizza for 17 minutes until cheese is brown and bubbly!
