Spring No Bake Cookies

  • 3 cups old fashioned oats
  • 1 bag Spring Peanut M&M’s
  • 1/2 cup butter (1 stick)
  • 2 cups sugar
  • 1/2 cup milk (almond milk works too!)
  • 4 tablespoons unsweetened cocoa powder
  • 1 tsp vanilla
  • 1/2 cup creamy peanut butter

Since these are “Spring” cookies, I decided to use the Spring colored Peanut M&M’s to give regular no bakes an extra punch of flavor!

First, measure out the oats into a large bowl – I find it easier to measure out the oats before doing any of the cooking. It just flows better with the order of this recipe.

Give the entire bag of M&M’s a rough chop. If you want to leave them whole, by all means – do it!

Add them to the bowl of oats, reserving 3/4 cup for later use.

Set everything aside.

In a medium sauce pan over medium heat, melt butter and add sugar  – whisking until the sugar has dissolved.

Once the sugar is dissolved, add your milk and cocoa powder and again, whisk until combined.

Remove this chocolate mixture from the heat.

Add your vanilla and peanut butter and stir until the peanut butter has melted.

Once this is all combined, add this liquid mixture to the dry oat mixture.

See why I find it easier to measure the oats out first? 🙂

Stir the chocolate and peanut butter mixture to coat the oats and M&M’s.

Spoon out the cookie mixture to the size you’d like onto parchment or wax paper. Foil works too!

Top each cookie with a little bit of the reserved chopped M&M’s.

I did chop my reserved portion a little finer, but you definitely do not have to!

Place the cookies in the fridge to firm up and serve!

*I did not do it this time, but it is easier to do place the parchment, wax or foil on a baking sheet for when you move them into the fridge. I had to wait until they dried a little to move each one onto a plate with a spatula. Too much work.. LOL

  1. In a large bowl, measure out the oats.
  2. Roughly chop the entire bag of M&M's and add them to the oats while reserving 3/4 cup for later use.
  3. In a medium saucepan, over medium heat, melt butter and sugar whisking until dissolved.
  4. Add milk and cocoa powder and whisk until combined. Remove from heat.
  5. Add peanut butter and vanilla and stir until peanut butter is melted.
  6. Pour the liquid mixture into the oat and M&M's mixture and stir until the dry ingredients are completely coated.
  7. Spoon out cookie mixture onto parchment or wax paper that is set out on a baking sheet.
  8. Top each cookie with reserved M&M's.
  9. Place in refrigerator until firm.
