Vegetable Rice Casserole

I was in the mood for some type of vegetable casserole but wanted something different. While I was looking around the grocery store, I thought cauliflower, broccoli and peas sounded like it would be a good combination to bake up.

When I got home I noticed I picked up two bags of broccoli, cauliflower and carrots!

But didn’t want carrots….

So, what did I do??! I picked them all out!

Haha! Don’t worry, they were saved for dinner the following day…

No wasting food in this house!!

 

  • 1 small bag of frozen broccoli, cooked
  • 1 small bag of frozen cauliflower, cooked
  • 1/2 small bag of frozen peas, straight from bag
  • 1/2 cup vegetable broth
  • 2 cups rice, fully cooked
  • 2 cans cream of mushroom soup
  • 1/2 yellow onion, chopped
  • 3/4 cup shredded cheddar
  • 1/2 Italian bread crumbs
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 -3 tbs butter
  • Cooking spray

 

Preheat oven to 375º.

To a large bowl, combine, broccoli, cauliflower, peas, chopped onion and vegetable broth.

To the veggie mixture, add your cooked rice.

Then, add the cream of mushroom soup. If you don’t like mushroom, cream of celery or chicken would work just fine.

Add 1/2 cup cheddar cheese (reserving the rest for later), salt, pepper and garlic powder. Stir.

Mix everything together until the veggies are completely coated with the soup.

Butter a 9×13 baking dish and pour the veggie mixture in.

Once the mixture is evenly distributed throughout the dish, top with bread crumbs and remaining 1/4 cup of cheese.

Lastly, spray the top of the casserole with cooking spray.

Bake casserole at 375º for 40-45 minutes or until casserole starts to bubble.

Instructions
  1. Preheat oven to 375º
  2. Combine broccoli, cauliflower, peas, onion, broth, rice and large bowl.
  3. Pour soup over mixture and stir to coat.
  4. Stir in 1/2 cup cheese, salt, pepper and garlic powder.
  5. Spread casserole mixture evenly into buttered baking dish.
  6. Pour bread crumbs over top of casserole and sprinkle with remaining cheese.
  7. Spray top of casserole with cooking spray.
  8. Bake for 40-45 minutes or until casserole is cooked through and bubbly.
