Cheesy Chicken Taco Soup


  • 2 cans cream of chicken soup
  • 1 can cream of celery soup
  • 1 can cream of mushroom soup
  • 1 can tomatoes with green chilies
  • 1 cup fresh salsa
  • 1/4 grated onion
  • 2 cups fat free half and half
  • 2 cups chicken broth
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • salt and pepper to taste
  • few drops hot sauce
  • 2 cups cooked chicken breasts, shredded
  • 2 cups shredded cheddar cheese
  • crushed tortilla chips for topping

In a saucepan, boil two chicken breasts until fully

cooked through, shred and set aside.

In a large pot, add in your creamy soups and whisk on low heat.

Add your tomatoes with chilies, salsa and grated onion to the soup mixture and stir.

Pour in the chicken broth, half and half, salt, pepper, garlic powder and onion powder.

Use as much hot sauce as you’d like to spice things up a bit! Simmer soup for half an hour.

Before serving, add shredded chicken and cheese and stir until melted. Top with crushed tortilla chips if desired.

  4. Pour in chicken broth, half and half, salt, pepper, garlic powder, onion powder and hot sauce and simmer for half an hour.
  5. Before serving, add chicken to soup along with cheese until it's melted.
  6. Top with crushed tortilla chips if desired.
