Garden Salsa


One of my friends has made this for many-a-gathering! He’s always called it, Garden Salsa,” as it is a fresh medley of tons of veggies and it’s full of flavor! This is an ode to my friend of 13 years- Artie J!

 

  • 3 tomatoes on the vine
  • 1/2 red onion
  • 1/2 orange pepper
  • 1/2 yellow pepper
  • 1/2 cup frozen corn – thawed
  • 1/2 cup black beans – drained
  • salt
  • pepper
  • 2 tablespoons minced garlic
  • garlic powder
  • onion powder
  • cilantro (fresh or dried!)
  • 1/4 cup canola oil
  • 1/8 cup vinegar
  • juice of 1 lime
  •  

Finely dice your three tomatoes and peppers and combine in a medium or large sized bowl.

Add your seasoning! The salt, pepper, garlic powder, onion powder, minced garlic and cilantro!

I used dried cilantro although fresh would be suuuch a great component to this Salsa!

The seasoning salt will be between the tomatoes and peppers and topped with the rest!

Toss in your black  beans, red onion corn, – not pictured πŸ™ – I only took a pic with the  black beans – oops!!

Add the vinegar, oil and fresh lime juice and stir!

Give it a taste to see if it could use a bit more vinegar or not. It’s all in the taste buds!

Add chopped jalapeno if you like some spice – or instead of eating this salsa with tortilla chips, it would bring a nice, crisp taste to fajitas or tacos at home!
