Whether you pronounce it, “Bru-SH-etta” or “Bru-SKE-tta,” doesn’t matter – it’s delish either way!
- 4 thinly cut chicken breasts
- canola oil
- 2 tomatoes – use whatever’s on sale! Haha!
- onion powder
- minced garlic
- olive oil
- mozzarella – shredded
To get this started, drizzle some canola oil in a skillet and wait for it to heat up.
Place your thinly sliced chicken breasts in the oil and season with salt, pepper, garlic powder and onion powder.
While your chicken is cooking, you will make your bruschetta!
Dice up two tomatoes and place in a bowl.
Add salt, pepper, garlic powder, minced garlic, basil and a few drizzles of olive oil to the tomato bowl.
Mix well and set aside.
Once your chicken is browned on the one side, flip over and season the other side the same way – salt, pepper, garlic powder and onion powder.
Once chicken is cooked through, turn your burner down to low.
Top each piece of chicken with your bruschetta and parmesan.
Then top with mozzarella!
Place the lid on your skillet and watch the cheese melt…
