Chicken and Greens Wrap


 

  • 3 pieces of thinly sliced chicken breasts
  • canola oil
  • 2 cups of mixed greens – I used a kale, arugula and spinach mix from Aldi!
  • 2 cups fresh or frozen broccoli
  • 1 1/2 cups shredded cheddar
  • 1/2 cup black beans
  • salt
  • pepper
  • garlic powder
  • minced garlic
  • spinach wraps – got mine at aldi

 

Heat some canola oil in a skillet and place your chicken breasts in it.

Generously season with salt, pepper and garlic powder.

Once the chicken is finished cooking, cut it into a small dice and throw it back into the pan.

Add your broccoli, black beans and mixed veggies to the mix.

Season everything with a little more salt, pepper and minced garlic.

Cook until veggies are cooked through. About 7-10 minutes.

Place about a cup of the chicken and greens filling on one end of your wrap.

Top with a little shredded cheddar.

Roll up the wrap over top of your filling and hold in place.

Fold each side over the filled portion of your wrap and roll tightly!

Drizzle a frying pan with a little canola oil on low heat.

Place wrap in oil seam side down to brown a bit then flip to do the same on the other side.

Let wrap rest a few minutes before cutting in half!

Then eat!!

Instructions
  1. 1. Season chicken breasts with salt, pepper and garlic powder.
  2. 2. Cook chicken in a little canola oil in hot pan. Once chicken is thoroughly cooked, cut it into a small dice and throw it all back in the pan.
  3. 3. In with the chicken, add your mixed greens, broccoli and black beans. Re-season everything in the pan with salt, pepper and minced garlic. Lid the pan and steam everything on low until broccoli is cooked through.
  4. 4. Place about a cup of the chicken and greens mixture onto the bottom portion of a wrap. Sprinkle a little cheese over top of the filling. Fold the bottom part of the wrap up over the filling and hold in place. Take each side of the wrap and fold over top of the filled portion of your wrap, and roll tightly.
  5. 5. Heat canola oil in a frying pan on low heat. Place wrap in heated oil seam side down for a few seconds to brown. Flip and do the same on the other side.
  6. 6. Allow wrap to cool for a few minutes before cutting in half or eating.
