Eggplant Pizza


 

  • Foil lined sheet pan
  • olive oil spray
  • Olive oil
  • Salt
  • Pepper
  • Garlic powder
  • Minced garlic
  • Onion powder
  • Large can crushed tomatoes
  • Eggplant
  • Parmesan
  • Pepperoni (any other toppings you wish!)

      *Preheat oven to 400 degrees and spray foil-lined baking sheet with olive oil spray

 

After preheating your oven and preparing your pan, place the sliced eggplant a few inches apart (a little sliced eggplant was better, maybe 1/2  inch slices?). Then drizzle the top with olive oil, flip each piece, drizzled more on top and sprinkle with salt, pepper and garlic powder.

Bake for 15 minutes and turn each one over at the 5 minute mark. While they are baking, make your pizza sauce….

The Pizza Sauce

I like a pretty simple pizza sauce. I don’t know why but I don’t prefer a ton of herbs in mine. It’s weird because I love flavor! Anywho, first thing ya do is fry up some minced garlic in some olive oil in a sauce pot.

Then I add one large can of crushed tomatoes, a few drizzles of olive oil, salt, pepper, garlic powder, onion powder and a little dash or two of basil.

Now what I did notice is that I did end up tasting it as I went on and I did add more of the seasonings but did not add extra basil. It’s really all in your taste buds.

It needs to simmer for about 15 minutes is all

Next, use your toppings!!! I used sauce, shredded parmesan, mozzarella and pepperoni.

Bake them for 5 minutes then turn on your broiler and bake for an additional  4-7 min. I like bubbly, brown cheese…
