Chicken Philly



We used to make these a local sports bar that I used to work at…one of my favs!!

 

  • 1 loaf French bread
  • 3 chicken breasts – cut thin
  • 1 green bell pepper
  • 1/2 white onion
  • mushrooms
  • salt
  • pepper
  • garlic powder
  • onion powder
  • olive oil spray
  • mozzarella cheese

*Preheat oven to 350 degrees

 

Start cooking your chicken breasts in a pan sprayed with olive oil spray.

Season them with salt, pepper, garlic powder and onion powder.

While they are cooking, chop up your onion and green pepper into small pieces and set aside.

Once your chicken is finished cooking, take each piece out of the pan and place them on a cutting board to rest for a few minutes.

Add your mushrooms, onion and peppers to the pan that your chicken was cooked in.

I’m sure you can tell I don’t have mushrooms in my pan – I forgot to buy them, not cool šŸ™

DO NOT wash the pan before putting in your veggies. All of the seasoning that was on the chicken should have cooked off into nicely charred bits.

This is what will now give your veggies great flavor!!

Now that your chicken has cooled down for a few minutes and your veggies are starting to soften, dice up the chicken and throw it all into the pan!

Let the chicken and veggies combine flavors and cook for about another 5 minutes or so.

Take your French bread and cut it in half as if it were a sub bun.

On the bottom part of the “sub bun,” pull out pieces of the bread. This will form a pocket to keep your filling from falling out so easily!

Fill the pocket with a little sprinkling of mozzarella cheese.

Add your chicken and veggie mixture.

Top with more cheese!

Place the sandwich on a sheet pan and bake just until the cheese is melted.
