Vegetarian Sub

  • 1 large yellow squash
  • 1 container of sliced, fresh mushrooms
  • 1 medium yellow onion, sliced
  • 1 red pepper, sliced
  • 1 orange pepper sliced
  • 4 pieces provolone cheese
  • 1 tablespoon garlic powder
  • 1 teaspoon black pepper
  • Salt to taste
  • 5-6 tablespoons olive oil , approximately
  • 1 loaf of Italian or French bread

In a large skillet, heat about 4 tablespoons of olive oil over medium heat.

Add your veggies!

Add about another tablespoon or more of olive oil over top of the veggies.

Season with salt, pepper and garlic powder and give it a good stir.

Be sure to stir every few minutes to ensure the veggies do not burn.

After about 15-20 minutes your veggies should have a few bits of char on them and be nice and softened.

Cut your loaf of bread in half lengthwise, but be careful not to cut completely through, so you can fold the top part over the veggies when the sub is ready.

On one side of the loaf, peel out some of the bread. This is where your veggies are going to sit!

In the little pocket you made in your loaf of bread, carefully spoon in the veggies.

Pile them high!!

Top the veggies with provolone…almost done!

Bake in the oven for about 7-10 minutes until the cheese is melted and you have it toasted to your liking!

Give the sub a few minutes to cool and cut into pieces.

So flavorful you won’t even noticed it’s meatless!

  11. 1 loaf of French or Italian bread
Instructions
  1. Preheat oven to 300 degrees
  2. In a large skillet, heat 4 tablespoons of olive oil and add veggies.
  3. Top veggies with another tablespoon of olive oil, salt, pepper and garlic powder.
  4. Cook veggies until softened and a bit charred.
  5. Cut loaf of bread in half make sure not to cut all the way through so you can fold the other side over to make sub.
  6. Pull out small pieces of bread on one side of the loaf leaving a pocket in the bread.
  7. Add veggies inside of the bread pocket and pile them in high.
  8. Top veggies with provolone.
  9. Bake 7-10 minutes until cheese is melted and bread is toasted to your liking.
  10. Let sub sit and cut into pieces.
  11. Serve with mustard or mayonnaise if you wish.
