Cheddar and Green Onion Whipped Potatoes



Although this is not a gourmet side dish, the inspiration behind these potatoes comes from one of my favorite chain restaurants – Friday’s! It pairs very nicely with a juicy steak and grilled broccoli!

 

  • 5 lbs baking potatoes
  • salt
  • pepper
  • onion powder
  • 1/2 stick butter
  • 1/3 cup cream + 2 tablespoons water OR 1/3 cup milk – any kind
  • 8 oz sour cream
  • chopped green onion
  • 8 oz shredded cheddar cheese

 

Boil your potatoes until fully cooked through and drain.

Pour potatoes back into pot and add your salt, pepper and onion powder.

Add your butter, cream, water and sour cream – I used fat free sour cream. Why you ask? Because that’s what SI had and it just s

ounded like a healthier option haha! 

Whip potatoes together until smooth.

The reason I added water was because I only had heavy cream in my fridge and no milk!!! I added the 2 tablespoons of water to loosen it up a bit since the potatoes were so heavy.

If you choose to use milk, you will not need to add the water.

Add your chopped green onion.

Use as little or as much as you’d like. I’d say I used about a good 3/4 cup or so.

I love the flavor of green onion!


Add your cheddar!

Like I always say, I grate my own. It melts nicer.

Whip potatoes one more time until the green onion and cheddar is combined and serve!

Ingredients
  1. 5 lbs baking potatoes

Instructions
  1. Boil potatoes until soft.
  2. Drain potatoes of the water and pour back into pot.
  3. Add seasonings - salt, pepper and onion powder.
  4. Add butter, sour cream, heavy cream + water or milk - no water is needed if you are using milk instead of cream.
  5. Beat with a hand mixer until smooth.
  6. Add the green onion and cheddar and mix until combined.
  7. Mangia!
