Mediterranean Salad

 

 

  • 1 package grape tomatoes, cut into halves
  • 1/2 seedless cucumber, chopped
  • 1 cup chick peas, drained and rinsed
  • 1 cup feta cheese
  • 3 mini peppers chopped, or half a large pepper, color preference is yours!
  • 1/4 cup olives of your choice
  • 1/4 cup apple cider vinegar
  • 1/2 cup plus 2 tablespoons olive oil
  • 2 tablespoons minced garlic
  • salt and pepper to taste

 

To a medium sized bowl, add your tomatoes.

I cut some in half and some into thirds.

Cut your cucumber in half and peel off some, all, or none of the skin and chop!

Take your can of chick peas, drain and rinse. Throw both your cucumber and beans into the bowl.

Next, add your feta, chopped up pepper and chopped olives of your choice.

I LOVE garlic so I chose to use garlic stuffed olives!

I used the mini peppers that come in bags, you know, the kind that have the yellow, orange and red peppers together? I used these because that’s what I had on hand and cut up one of each color.

Now, add your olive oil, apple cider vinegar, salt, pepper and minced garlic.

Give your salad a real good mix!

Taste it to see if it needs more salt, more vinegar, more pepper, more cheese or anything else.

Instructions
  1. In a medium sized bowl, add your tomatoes, cucumber (with or without skin), chick peas, feta cheese, olives and peppers.
  2. Add vinegar and olive oil.
  3. Add salt, pepper and minced garlic.
  4. Stir salad together and taste.
  5. Add more salt or pepper to your liking.
  6. Enjoy!
